Couscous with Roasted Veg

Ever had those days when you just can't be bothered to cook but want something healthy and tasty? Couscous is a great staple to have in your cupboard and helps you to use up all that veg that's hanging around at home! Roasted in the oven with couscous it's the perfect healthy lunch or side! Cheap, easy and tasty.


  • 1 red pepper roughly chopped
  • 1 carrot roughly chopped
  • 1 onion roughly chopped
  • 3 sprigs of long stem broccoli
  • 1 tbsp vegetable oil
  • 1 stick of herbs (like marjoram or rosemary)
  • 150g couscous
  • Salt and pepper to taste



Preheat the oven to gas mark 4/180°C/160°C Fan/350ºF. Line a large tray with foil and spread out your chopped vegetables. Season with salt and pepper. Roast for 25-30 minutes until soft and golden.


Place the couscous in a bowl and pour over 150ml of boiled water. Place a lid on the bowl and leave for 5-10 minutes.


Mix together the couscous and vegetables.


These vegetables are just an example of many that you can use: green beans, cauliflower, spring beans, mushrooms... the possibilities are endless!
