Fiery red rice salad. It’s amazing. Once made its the perfect salad to keep in your fridge for a couple days whether it be for a lunchbox for healthy dinner. Cook the rice for 20-30 minutes (you want it still with a bit of bite to it). In the meantime grate the carrots and combine with the coriander and spring onion into one bowl. When the rice is cooked try to cool it down by spreading it out on a flat surface. For the dressing add the chilli, juice of the limes, honey, oil and season with salt and pepper, shake.
