Pasta in a Mushroom Sauce

Pasta in a mushroom sauce - who would've thought the wonder of mushrooms (one of the cheapest ingredients at the shop) could be made into a sauce?! This is also great with some bacon pieces thrown in to give it a bit more saltiness #yesyesyes

Ingredients

  • 200g spaghetti
  • Small handful of parsley
  • 150ml creme fraiche
  • 1 garlic clove
  • 2 small onions
  • 1/2 a lemon
  • 200g mushrooms
  • 1 tsp mustard

Finely chop the onions and fry till soft then add the garlic frying for a couple minutes. Then stir in most the mushrooms (leaving a couple behind for later!) and fry until soft. Season with salt and pepper.

Start cooking pasta according to packet instructions. Blend the creme fraiche, mustard, mushroom and lemon together to a smooth sauce/paste. Finely slice and in a knob of butter fry the remaining mushrooms until crispy.

Stir the cooked pasta into all the ingredients together (scatter with some chives if you have them) and enjoy!
